Paleo Pancakes

Paleo Pancakes  Recipe

Serves 2

Ingredients

  • 4 Eggs
  • 1 Ripe Banana
  • 1/2 Cup Almond Butter
  • 30 g Vanilla Protein Pwd
  • 1/2 Tsp Baking Soda
  • Cinnamon to sprinkle
Directions

  • 1. Mash banana, mix with eggs and vanilla. Add dry ingredients and mix till blended thoroughly.
  • 2. Preheat skillet/frying pan on low to medium heat (2-4). Add a bit of coconut oil.
  • 3. Pour in mixture to desired pancake size. Note a 1/4 cup measuring cup works perfect size pancakes.
  • 4. Flip over when batter has a significant amount of bubbles of top. Heat through.
  • Serve with warmed fruit mixture (strawberries, blueberries, apple, grapes, cherries, etc). They will be sweet enough like this or drizzle with real maple syrup.
  • Also you can sprinkle with crushed nuts of choice such as walnuts!
