Wraps Recipe

Ingredients

  • 5 eggs
  • 1-2 tbsp coconut flour
  • < 1/2 cup almond flour
  • <1/4 tsp salt
Directions

  • Select size of pan that will accomodate your wrap ingredients. Preheat frying pan on low to medium.
  • Place coconut flour in measuring cup, add almond flour up to 1/2 cup. Add salt and eggs. Mix well with handblender till fairly smooth.
  • Coat frying pan with a little bit of coconut oil.
  • Quickly pour in egg mixture in centre till about 1/2 -3/4 circumference is filled. Quickly swirl mixture around to edges.
  • Cover with lid and heat for about 2 minutes. Remove lid and wait till edges curl up. Then carefully flip over. Return lid and heat for 1 minute.
  • Completely cool before storing in fridge. Will keep for several days.
  • Garnish with your usual sandwich fixings. Wrap in saran wrap if it tends to tear.
  • Makes: 4-6 wraps depending on pan size.
